The award celebrates what the French have always known that exceptional craftsmanship developed through the transmission of expertise endorses regional excellence and a cultural heritage that is valued far beyond home shores. Beautiful Baccarat French Baccarat crystal is a perfect example of this artisanal legacy. World-renowned it comes from a northeastern town of the same name and was founded in 1764 following a decree by Louis XV to establish glassworks on the banks of the river Meurthe. The techniques are timeless and sauniers lives revolve around the fluctuating seasons and the island winds much like how their forefathers did. Sweet treats Fine food is synonymous with France. Despite fierce competition at home and abroad the artisan producer is still thriving. While the names are regional think Dijon mustard Mont limar nougat Piment d Espelette or Biscuit Rose de Reims the products themselves are often made by individual companies using long-established skills. Of note is Flavigny in Burgundy renowned for its pea-sized white sweets each year 250 million Anis de Flavigny candy balls are eaten globally. Madame Pompadour was known to be very fond of them in the 18th century as was Louis XIV. They are still made in the grounds of a former abbey which became a factory founded by displaced monks following the French revolution. The sweets are made to the original recipe using just anise seeds sugar and natural flavourings such as anise orange blossom or rose. Manufacture may no longer be small-scale but production methods are unchanged. Feet first in Charente The Charente region is famous for sunflowers and its slippers. Created in the 17th century using recycled felt paper the chic Tcha slipper is a 21st century incarnation. In 2005 the Charente Council decided to relaunch their famous slipper incorporating the reverse stitching technique. It established methods of past centuries with a designer twist using modernised machinery to work woollen felt linen lamb s leather and veal velvet. And her 50-seat restaurant aptly called Saimok Kab Dokmai ( Mist and flowers ) an alfresco dining room surrounded by nature s bounty including flowers found in the restaurant s dishes does just that. Potiwat s flower-inspired menu is abundant spring rolls stuffed with begonias and pansies coconut orchid soup with blue butterfly pea rice rose water and hibiscus juice. She uses whatever flowers are in season and available from her gardens but she always picks the buds fresh to retain their succulence nutritional value and beauty. She was inspired by Latina author Laura Esquivel s Like Water for Chocolate a quirky tale about a Mexican girl whose emotionally charged cooking including one particularly rich meal of quail in rose petal sauce sends everyone who eats it into a tizzy. With the support of an ethnobotanist friend who helped her identify flowers that are safe to eat Potiwat started growing organic flowers for her kitchen. When I first told people I wanted to eat and cook with flowers they thought I was crazy. Many people were afraid of eating them she remembers. She needn t have worried. Her most popular dishes tempura flowers mixed spicy floral salad and rose petal salad with shrimp have been flying out of her kitchen ever since she opened in 1998. However her personal favourite is a steamed savoury custard studded with red and yellow ixora flowers which have an astringent rose-like taste. The food Safety Edible flowers campaign has increased local competition but Potiwat welcomes it. She s happy that people are realising the environmental and nutritional benefits of edible flowers. Now many places have flower food and I m glad because I don t seem so crazy she says. You can also fry certain types of flowers in batter like zucchini flowers in Italian cuisine. Cut heart of palm into 2cm squares. 2. Add banana blossom and heart of palm to dressing and warm it on stovetop. Remove from heat. 3. Toss in deep-fried shallots toasted coconut chilli flakes roasted peanuts and half of the kaffir lime leaves and mix together. 4. Transfer to a serving plate. Drizzle some turmeric cream and garnish with assorted flowers red finger chilli peppers and remaining sliced kaffir lime leaves. Cleaning and preparing banana blossoms 1. Prepare a bath of cold water by adding the lime juice to the water. 2. Peel away and discard the outer red petals and small white strips of banana flower from the blossoms. 3. Cut off the tips and the ends. Split the blossoms in half lengthwise then halve the pieces again. 4. Soak the blossoms in the water bath to prevent them from turning black. 5. Peel and clean each layer of the blossoms again making sure to discard the small white strips of banana flower inside. 6. Dice the cleaned leaves into 2cm squares and return the pieces to the water bath as you continue to chop the rest of the leaves. 7. There are many good restaurants our favourite is Au Lac House in Tran Hung Dao Street which serves delicious Vietnamese food. Some of the activities I especially enjoyed are the Chinese New Year celebrations in Chinatown and Dragon Boat Festival at Clarke Quay. I am also impressed with how child-friendly Singapore is.
